A healthy but cheeky weekend breakfast (featuring bacon)

Let’s face it, we want to eat something nice for breakfast at the weekends, but bacon and diets don’t go together right? Maybe this will change your mind…

Bacon only comes in at about 70 calories a rasher (at least it does in the UK, ours looks like this), and poached eggs are about 75, and crumpets are about 90. So have two rashers of bacon, a crumpet and a poached egg for a mega filling 300 calorie breakfast. Trim the fat off the bacon to counteract the butter you add to the crumpet (but don’t go nuts with the butter, a bit of egg yolk will keep it nice and moist). Serve with some grilled cherry tomatoes sprinkled with black pepper for some variation in flavour.

Ingredients:

  • 2 rashers of bacon, with the fat trimmed off
  • 1 crumpet
  • 1 egg

Grill the bacon on both sides to match how you like it done. Poach the egg (there are a number of ways to do this, if you’ve got the skills to pay the bills try this, alternatively, I have this). Toast the crumpet. Serve.

I almost feel silly putting such a simple recipe up (a lot of my recipes are like this!) but the point I wanted to make is how something that might have a bad rep (like bacon) might not be as bad as you think!
